How is an EMG different than an action potential in reference to skeletal muscle systems in biology?

An action potential always has the same amplitude of voltage, in other words it is always the same. An EMG depends on the amount of nerves innervating a muscle and the frequency of action potentials. Therefore an EMG can be small or large - and this determines the force of the muscle contraction.
